Migration of Bacteriocin from Bacteriocin - Coated Film and Its Antimicrobial Activity

Abstract

|
Two bacteriocins, nisin and lacticin NK24, were coated onto a low density polyethylene film in 2% polyamide binder solution. Additives, such as sodium chloride, citric acid, and surfactant, were also added in the fabrication to determine their effects on the migration of the bacteriocin and antimicrobial activity against an indicator strain, Micrococcus flavus ATCC 10240. The effect of contact solution on the migration from the film, and its antimicrobial activity were also investigated. Migration of raisin was more affected by the contact solution than that of lacticin NK24. Antimicrobial activity of the bacteriocin-coated film was not solely determined by the migration of the bacteriocin to the contact solution, and the intrinsic nature of the solution against the microorganism was an important factor in controlling the degree of microbial inhibition. Incorporation of sodium chloride, citric acid, and surfactant in the coating medium did not improve the bacteriocin migration and the film¢¥s antimicrobial activity.
